Almond Protein bars

Have you ever looked at the ingredients in a power bar at the grocery store? There is so much sugar added. They can also be loaded with not so great for you ingredients like flavoring, high oleic sunflower oil, palm kernel oil, dries cane syrup, and soy lecithin, to name just a few.

Fortunately, I have a delicious protein bar recipe that’s free of refined sugar and all those other nasty ingredients that our bodies do not need. Chop the following ingredients in a food processor and press into a container lined with parchment paper. Freeze for 20 minutes, or until set, then cut into the bars. These are so great to grab and go, throw in your purse or in the kids’ backpacks for a quick, nourishing snack. They are high in protein and high in healthy fats, so they are also perfect for pre or post-workouts.

Ingredients:

1 cup dates
2 TBS collagen powder
1/2 cup almonds
1/2 cup cashews
1/2 cup pumpkin seeds
1/2 cup shredded coconut
1 TSP chia seeds
1 TSP cinnamon
3 TBS cashew or almond butter
3 TBS maple syrup

optional: add spirulina

Enjoy!
