Nourishing Lab Energy Bites

These energy bites are the perfect healthy snack for teenagers and the rest of the family. They’re packed with whole food ingredients, including nuts, seeds, dried fruit, and oats. They’re also naturally sweetened with honey or maple syrup.

Ingredients

  • 1 cup raw almonds or cashews
  • 1/4 cup pistachios
  • 1 cup organic dates, Trader Joes
  • 1/4 cup raw almond or cashew butter
  • 3 tablespoons flax meal
  • 3 tablespoons cacao powder
  • 1 tablespoon coconut
  • 1 teaspoon alcohol free vanilla extract
  • dash of Himalayan salt

Directions

  • Step 1

    Combine all the nuts and seeds in a food processor and pulse until broken down. I sometimes will blend it less resulting in bigger chunks.

  • Step 2

    Transfer the processed nuts to a mixing bowl.

  • Step 3

    In the food processor, combine dates until smooth.

  • Step 4

    Add the nut and seed mixture back into the food processor and blend.

  • Step 5

    Add the rest of the ingredients. You may need to transfer the "batter" to a bowl to mix further.

  • Step 6

    Using a tablespoon or ice cream scoop measure the batter and roll into balls.

  • Step 7

    Enjoy!
