These super-food-filled protein-packed bites are perfect for a pre-workout boost or mid-day recharge. Turmeric and ginger are gut-loving, anti-inflammatory foods that will have your body giving you a high five!
INGREDIENTS:
- 1/2 cup unsweetened coconut flakes
- 1/2 cup raw almonds
- 1/2 cup raw pumpkin seeds
- 1 1/2 cup pitted dates
- 1/4 cup chia seeds
- 1/2 cup creamy almond butter
- 1 tsp ginger
- 1 tsp turmeric
- 1/2 tsp kosher salt
DIRECTIONS:
- Pulse coconut, almonds and pumpkin seeds in a food processor until coarsely chopped. Transfer to a medium bowl.
- Pulse the dates in the food processor until finely chopped. Scrape down the sides and add chia seeds. With the motor running add almond butter, ginger, turmeric and salt; process until very smooth. Add coconut mixture and pulse until just combined.
- Scoop date mixture by level tablespoons, roll into balls, then roll in reserved coconut flakes.
- Transfer to plate and chill for at least one hour.
