turmeric protein balls

 

These super-food-filled protein-packed bites are perfect for a pre-workout boost or mid-day recharge. Turmeric and ginger are gut-loving, anti-inflammatory foods that will have your body giving you a high five!

 

INGREDIENTS:

  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup raw almonds
  • 1/2 cup raw pumpkin seeds
  • 1 1/2 cup pitted dates
  • 1/4 cup chia seeds
  • 1/2 cup creamy almond butter
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1/2 tsp kosher salt

 

DIRECTIONS:

  1. Pulse coconut, almonds and pumpkin seeds in a food processor until coarsely chopped. Transfer to a medium bowl.
  2. Pulse the dates in the food processor until finely chopped. Scrape down the sides and add chia seeds. With the motor running add almond butter, ginger, turmeric and salt; process until very smooth. Add coconut mixture and pulse until just combined.
  3. Scoop date mixture by level tablespoons, roll into balls, then roll in reserved coconut flakes.
  4. Transfer to plate and chill for at least one hour.
