Ingredients:

¾ cup Quinoa

1.5 cups Water or Broth

4 cups chopped Broccoli Florets

1/4 cup Pumpkin Seeds

1 large Apple, diced

1 cup thinly sliced Celery

2 cups Lacinato Kale, chopped

1/4 cup Olive Oil, divided

3 Tbsp. Lemon Juice

2 cloves Garlic, grated

1 Tbsp. Honey

1/2 Tbsp. Dijon Mustard Or 1 Tbsp. Tahini

Salt and Pepper

 

Directions:
1. Add the quinoa and water/broth to a pot. Bring the liquid to a boil and then reduce the heat so the liquid is at a simmer. Cover the pot and cook for about 15 minutes. Remove the pot from the heat and allow the quinoa to fluff and cool.

2. Massage the kale with 1 tablespoon of the olive oil. Toss it in a bowl along with the broccoli, apple, celery, and pumpkin seeds. Add in the cooled quinoa.

3. Mix together the lemon juice with the garlic, honey and mustard (or tahini). Whisk in the remaining olive oil and season with salt and pepper. Toss the salad with the dressing and enjoy.
